This month we are proud to feature one of the breweries that brought us the highest number of positive responses (and requests for more beer, which we apologize for not having) in 2007: Grand Teton, in Victor, Idaho. And we have also decided to vary our usual formula for the month, as well, by shipping a number of their offerings from their limited "Cellar Reserve" series. Your exact shipment will vary depending on the quantity of your usual delivery, and your response to our reminder and update emailing of earlier this month. No matter which beers you receive, you'll find these to be outstanding and seasonally-appropriate brews for the winter months, the colder weather, and the comfort foods that taste so good at this time of year.

Founded in 1988 by Charlie and Ernie Otto as Otto Brothers’ Brewing Company, the original facility was the first modern “micro” brewery in the state of Wyoming. The popularity of their beers grew rapidly, so that in 1992 the brewery embarked upon acquiring a 22-ounce bottle production line. This success created an even greater demand that resulted in ground being broken in the spring of 1998 for a new brewery at the base of Teton Pass in Victor, ID. The proximity to locally-grown barleys and northwest hops, as well as nearby Teton Glacier water, made for an excellent location. Teton Glacier is located below the north face of Grand Teton in Grand Teton National Park, and is the largest of the twelve named glaciers in the park, at approximately 3,500 feet (1,066 m) long and 1,100 feet (335 m) wide. The name change from Otto Brothers’ to Grand Teton was made in the fall of 2000, and the owners feel that it makes a more regional and recognizable statement while still maintaining a proud history and tradition.

Four times a year, Grand Teton lets their brewmaster show off what he can do. The results of his efforts are brought to a very limited number of customers as the Cellar Reserve Series of beers. They are unique, flavorful, strong, and released only when they have aged to perfection. Production time is usually 3-6 months. These higher-alcohol beers are krausened by blending newly fermenting beer into the finished beer to produce a secondary fermentation in the bottle. This bottle conditioning creates natural carbonation, a dense creamy head, and a fine layer of yeast on the bottom of each bottle. If properly handled, they can be laid down and should continue to mature in the bottle for months or even years.
