A small amount of cassis is added to Cassissona at the beginning of the fermentation. It is matured for at least six months. Birrificio Italiano is a small brewpub in Lurago Marinone, just east of Turin and close to Como. The owner and brewmaster Agostino Arioli, who crafted this month's exuberant, effervescent, sweet Cassissona, founded the brewery and restaurant with his brother Stefano in 1997. All beers sold on premises are house beers, and most are bottom fermented. Agostino designed the brewhouse, and had it produced locally. All of his beers are uniquely Italian variations on classic beer styles.
